Annual thanksgiving pie recipes

With my favorite holiday tomorrow I had to pick out a few pies to make tonight. Picked out some new recipes, I'll let you know how they go. Anyhooo, Mary doesn't want to many pies this year (ah man!) so I'm making just two:
An apple pie
And a chocolate-caramel cheese cake (yum!)

woo hoo! Well you know me kinda conservative when it comes to this most hallowed of fests, baked only apple and punkin, but we also had (ahem) marinated quail breasts wrapped in bacon and grilled, served with a fine vintage (among other things,) so that sorta made up for my lack of flair in the goodies dept. The makers of Tums are really rbbing their little paws together I am sure, banking on tomorow. PS- I heard your parents were supposed to be in Moses Lake today? The pass is a mess right now due to all that white stuff. Hope they are OK--later

Bob, looks great! Now that youhave runing water, you will have to make your own pie crusts from scratch from now on. Let me know how they turned out.
 
Yeah they were all pretty good. The best part of the cheesecake was the carmel & graham cracker layer. The chocolate cheesecake was okay but not raging good. Grandma Johnson thought the chocolate could have been stronger and I thought less cream cheese and more heavy whipping cream would have been nice. The apple pie was super good though. Used Johnagold apples and an extra bit of corn starch. The pie turned out great. I need to swing by Fred's for vanilla ice cream tonight to top it off...
The pumpking was good like always, too. We were all full to bursting after everything. I'll put pictures up in a bit.
Those quail sound awesome. We were talking last night about wrapping the turkey in bacon and how good that might be. Yeah, I haven't heard from them yet but they're supposed to be on the highway and pulling in there pretty soon.

Just happened to see that you posted a comment on my blog a while back. Gez, I thought an alarm would go off if that happened. I realized that several other people have made comments since July...probably think I am rude not responding back :)

Yes, we are coming home to good ol' Fairbanks. Leaving here the 3rd of January...defended thursday and will now be known ad Dr. Nielsen...and alos got a new truck...a 2004 F-350, diesel, crew-cab, and long-bed...sweet. Check it out on my blog.
